Alex is opening his kitchen to members of the KC Food Circle. Up to 12 students will spend roughly two hours starting at noon (12:00 pm) in the Local Pig’s production kitchen working on the basics for creating charcuterie products.
During class you will:
- cure bacon
- create a fermented and smoked sausage
- brine ham
- make pate
Full participation is recommended if you only want to watch and ask questions you are welcome too. We will be in a professional kitchen so please wear flat shoes and the appropriate attire.
Each participant of the charcuterie class will receive:
- lunch and beverages
- hands-on butchering practice
- roughly 4 pounds of various charcuterie items to take home
